Pepperoni Stuffed Mozzarella Patties

Ingredients
1  pound  whole milk mozzarella  
24  slice  pepperoni  
4    eggs beaten  
2  cup  seasoned Italian breadcrumbs  

Directions
1. Slice a block of mozzarella into 1/4 inch slices. Cut each slice in half. 2. Place two slices of pepperoni over half of the slices. 3. Create a cheese sandwich with the remaining halves of mozzarella, and press firmly to seal. 4. Set up a dredging station with the flour, eggs and breadcrumbs. Dip each mozzarella sandwich into the flour, then the egg, and then the breadcrumb. Re-dip each sandwich into the egg and then the breadcrumbs. 5. Spray the patties with cooking spray. 6. Cook the sandwiches in the Power AirFryer XL at 400 degrees for 6 minutes, flipping the patties halfway through the cooking process.
